Dinner in a Pinch: Tuna Tar-Tar-dy

I know this picture doesn't look that appealing...frankly, you might not be able to really even see what it is anyway because the lighting in my kitchen is so terrible. But either way, I wanted to share with you what I made for dinner two nights ago because I've had it two more times since (having it for lunch today), and it was one of the easiest thrown-together dishes I've ever created.

I threw together what I had in the kitchen. It took five minutes to make. Literally. Five minutes. All you need is:
1 bag of plain tuna (from regular grocery store). I think a bag of tuna is weird too, but it's easier to open and use than a can.
1 box of frozen broccoli and cheese (from regular grocery store). Cook in micro using directions on the box.
1 box of whole wheat gnocchi (from Trader Joe's). Cook on stove top using directions on the box.
1 handful of grape tomatoes (from Trader Joe's)

That's it! Throw it all together, mix, and enjoy! It took longer to boil the water than it did to make the actual meal. I also started doing dishes while the broccoli was cooking in the microwave and forgot about the cooking gnocchi, so it got a little overdone. But whatever. It was easy peazy lemon squeezy. Oh, and it was pretty healthy too. Score two for the girl who used to burn boiling water!

I'm always looking for I'm-too-tired-to-cook meals, so if you have any old standbys let me know!

Love,
Stephanie Marie

  1. Update: It's called a light tuna pouch...doesn't make it much better, but still. Hungry Girl endorsed here: http://www.hungry-girl.com/newsletters/raw/126
